Ingredients

  • 1.5 pounds ground beef 80/20 lean-to-fat ratio
  • 1 large onion finely diced
  • 2 cloves garlic minced
  • 2 medium carrots diced
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 2 pounds russet potatoes peeled and quartered
  • 1/2 cup milk warm
  • 4 tablespoons butter
  • 1 teaspoon dried thyme
  • 2 tablespoons Worcestershire sauce
  • to taste salt and pepper

Equipment

Method

  1. Preheat oven to 375°F and place a large oven-safe skillet on the stovetop over medium-high heat
  2. Add ground beef to the skillet, breaking it into small pieces with a wooden spoon. Cook until browned and no pink remains, about 7-8 minutes
  3. Add diced onions, carrots, and garlic to the beef. Sauté for 4-5 minutes until vegetables begin to soften
  4. Stir in tomato paste, Worcestershire sauce, thyme, salt, and pepper. Cook for 2 minutes to develop flavor
  5. Pour in beef broth and simmer for 10 minutes until sauce thickens slightly, stirring occasionally
  6. Meanwhile, place potatoes in a large pot of salted water. Bring to a boil and cook for 15-20 minutes until tender when pierced with a fork
  7. Drain potatoes and return to pot. Add warm milk, butter, salt, and pepper. Mash until smooth and creamy
  8. Spread mashed potatoes evenly over the beef mixture in the skillet, creating decorative peaks with a fork
  9. Bake in preheated oven for 25-30 minutes until potato topping is golden brown and filling is bubbling
  10. Let rest for 10 minutes before serving to allow filling to set

Notes

For a richer flavor, use beef stock instead of broth. Can be made ahead and refrigerated before final baking.
