
Irish Cottage Pie
A classic comfort food featuring seasoned ground beef topped with creamy mashed potatoes, baked until golden and bubbling

- Preheat oven to 375°F and place a large oven-safe skillet on the stovetop over medium-high heat
- Add ground beef to the skillet, breaking it into small pieces with a wooden spoon. Cook until browned and no pink remains, about 7-8 minutes
- Add diced onions, carrots, and garlic to the beef. Sauté for 4-5 minutes until vegetables begin to soften
- Stir in tomato paste, Worcestershire sauce, thyme, salt, and pepper. Cook for 2 minutes to develop flavor
- Pour in beef broth and simmer for 10 minutes until sauce thickens slightly, stirring occasionally
- Meanwhile, place potatoes in a large pot of salted water. Bring to a boil and cook for 15-20 minutes until tender when pierced with a fork
- Drain potatoes and return to pot. Add warm milk, butter, salt, and pepper. Mash until smooth and creamy
- Spread mashed potatoes evenly over the beef mixture in the skillet, creating decorative peaks with a fork
- Bake in preheated oven for 25-30 minutes until potato topping is golden brown and filling is bubbling
- Let rest for 10 minutes before serving to allow filling to set
Notes
For a richer flavor, use beef stock instead of broth. Can be made ahead and refrigerated before final baking.
